Our Team

  • Campbell Craig

    Founder

A passionate Easton local, Campbell founded The Baffled King in 2023. Inspired by his mother, who owned three French restaurants over the years, Campbell developed a deep appreciation for good food and wine. With over a decade of experience in the wine industry, he helps the team to hand select our frequently changing wine list. Moving to Easton in 2017, he says the area is blessed with a community spirit he hasn’t seen anywhere else and he enjoys playing pool at The Plough.

  • Luke Spencer-Harrop

    Head Chef

Luke carries a wealth of experience in the kitchen, previously playing a key role in building the Bank Tavern’s reputation. With a deep admiration for renowned French chefs, including Michel Roux and Pierre Koffmann, Luke’s passion for French cuisine has helped him add fresh, imaginative dishes to our menu. A proud Bristol resident for 20 years, Luke is an avid amateur mycologist and a motorcycle enthusiast, but admits he’s a terrible mechanic. At least his culinary skills more than make up for it!

  • Molly Bates

    Front of House Manager

Molly has recently returned to Easton, having lived around Bristol for 5 years. She’s worked at top venues like The Crying Wolf in Cotham Hill and has a passion for exploring new restaurants and experimenting with recipes for friends and family. Molly loves The Baffled King for its independent spirit and relaxed atmosphere. Her ideal dinner starts with a Negroni, features her favourite dishes: duck breast and pork cheek bourguignon, and ends with a cheese selection from the Auvergne, paired with a glass of our Rippa Dorri Tempranillo.
